Here is my current favorite breakfast – 1 Fried Egg and 2 pieces of Sesame Ezekiel bread smothered in goat cheese and avocado.
This meal is full of high quality protein and fat which will leave you full longer and give you better satisfaction with the meal. The bread is made with sprouted grains that are full of micro-nutrients and contains complex carbohydrates that will help sustain your glucose levels. It’s super tasty and super easy to make.
Here are the main ingredients you will need:
1 egg, 1 onion, 1 avocado, 2 slices of Ezekiel bread, Goat Cheese, and seasonings of your choice ( I use tarragon, salt, crushed red pepper and black pepper)
First: Lightly toast the bread on low to get a light crispness to the bread.
Second: Spread a thin layer of goat cheese until the bread covered. Then add half the avocado to each piece of toast. Mash the avocado down with a fork until the bread is covered.
Third: Put the oven on Low Broil. Add seasonings of salt, pepper, crushed red pepper, and a few more chunks of goat cheese on the bread. Put in oven for approximately 5 minutes or until lightly browned edges.
Meanwhile, as the toast does its thing, sauté onions in a small amount of olive oil.
Finally: crack an egg over the oil and onion, sprinkle with tarragon and black pepper, and cook to your liking.
